Summer Squash

Are you tired of it, yet? I love it and look forward to it every summer. I usually freeze some to enjoy the rest of the year, too. My favorite way to eat it is fried. I like to mix it with okra and fry it together, along with some onion.

I've been experimenting with casserole recipes, and so far, Paula Deen's is my favorite.



The only thing I change about the recipe is to add more squash. It calls for 6 cups cut up, which I measure out--then I add two more medium squash to the amount. I keep all the other ingredients the same. It is delicious!

  6. What great timing. I just picked about 25 squash last night from my garden. I needed a new squash recipe. Sound delish. I think I will try it this weekend. I also love to make squash cream soup. Very refreshing:)

  7. Yes, now that you have brought it up, I am getting sick of squash. My kids have gotten tired of it already, too. Around here, everyone mixes up diced,cooked squash with cream of chicken soup and sour cream and top it with whatever you chose to top it with. I mix up a small batch of cornbread and pour on top of mine. The casserole is done, when the cornbread is golden brown...it's really good.

  9. Found you via Stitching by the lake. There is a cord wood cabin a few miles from me, I sometimes drive by just to look. They gave me a tour when they were in the building process (15 years ago). They put colored bottles amongst the wood, looked really cool. Our summer squash is not quite ready yet. We are all chomping at the bit waiting for it! I make a casserole that uses brown rice, hamburger, and stewed tomatoes, good stuff. I freeze it also for winter use.
