An Old Stand-by

Last night, we were needing a fast dessert~okay, not exactly needing, but you know what I mean! I didn't have time for anything very complicated, so I fell back on one of my old favorites. You've probably made this one yourself. If you haven't, I'd guess your mom or grandma has made it for you!



Easy Peach Cobbler


1 large can of sliced peaches, drained

1 cup of all-purpose flour

1 tsp. of cinnamon

2 tsp. of baking powder

1/2 teaspoon of salt (optional)

1 cup of sugar

All the juice from the canned peaches plus enough milk to equal one cup

One stick of butter, melted


Melt butter in 8x8 baking dish in the oven.


In a bowl, mix flour, baking powder, sugar, and cinnamon. Mix thoroughly and add the peach juice and milk liquid, stirring just until mixed.


Take baking dish from the oven and dump batter directly onto melted butter. Don't bother to spread it. Now, dump the peaches over the batter~no need to spread them around, either.


Bake at 350 for approximately one hour~check sooner if your oven cooks 'hot'.

Well, the groundhog saw his shadow~six more weeks of winter!

  6. Yes, that's an easy cobbler, and good. You can use other fruit, too, such as blackberries. I use self rising flour and that makes it even easier.

  7. No shadow here, grey and rainy all day. I would rather believe our own groundhog. Cobblers are wonderful with vanilla ice cream while they are still warm.

  8. This is one of my favorites. I like most any fruit in mine-strawberries, pineapple even a can of fruit cocktail. It's delicious w/ice cream over, especially peach w/butter pecan icecream. YUM!!
